In a way, Natalie Grant is every woman. This empowering perspective helped Grant overcome her battle with depression and lose 40 pounds over the course of the last 18 months -- unveiled as the August 17th cover of "First For Women" magazine -- and it's this perspective she wants to bring to others who are struggling in their own lives, helping them to overcome guilt and worry and be the people they're truly meant to be.

'Be One' is truly a family affair -- Grant co-wrote 7 of its 11 tracks, it was produced by her husband Bernie Herms (who is currently producing Barbra Streisand and Josh Groban), "Nothing But The Blood" features vocals from Grant's brother Steve, and "Ever Be" features vocals by Grant's daughters; twins, Grace and Bella (8) and Sadie (4).

Natalie will tour 'Be One' starting on Thurs., Dec. 3 and will continue to tour into the spring. She will simultaneously release a new book series for 'tween girls called "Glimmer Girls" through Zondervan Publishing in January 2016.

Author Answers Segment:

1. Describe your cookbook to us, what should readers expect?  
This is a slow cooker book that provides a wide range of recipes, from appetizers to desserts.  They are, in my opinion, recipes that taste delicious.  Deliciousness is my main objective in creating recipes.

2. What inspired you to become a writer and how has it changed your life?
Hard to say.  I’m told I always said I wanted to be writer…I read a lot as a little kid and loved being transported to other (more interesting) places via the written word.  I can’t really say it has changed my life since I more-or-less have always done it.  I started out as an editor in book publishing, then worked for magazines and newspapers before writing cookbooks.

3. What is the most exciting part of being a published author? 
I guess seeing the actual book…the finished product.  It is so much more polished and different from all that has gone before. Before it became a cookbook, it was simply words on a page. 

4. What were the biggest challenges you faced in writing this cookbook?  
As always, coming up with recipe ideas that I feel are innovative.

5. What are your favorite recipes from this cookbook?  
Since I’m now working on a book on Chile peppers, I guess I’d say the recipes that use chile peppers, such as Ribs in Tablecloth Stainer Sauce; Pork Roast with Chili-Orange Sauce; Southwestern Brisket. The Short Ribs with Orange Gremolata (even though they don’t have chilies) are pretty special, too.

6. What do your plans for future projects include? 
The fabulous book I mentioned above on Chile Peppers – it will be something a little different!

7. What are your hobbies? 
Traveling, eating in restaurants around the world, exploring food scenes everywhere I go. I love reading, I love fashion. I adore entertaining.

Marble Cheesecake
This is a rich and delicious cheesecake. The gingersnap crust and pumpkin-flavored base accented with chocolate is an irresistible combination.
Make ahead
This cake is best made a day ahead and allowed to chill in the refrigerator overnight.


SERVES 8 TO 10
Large (minimum 5 quart) oval slow cooker
    7-inch (17.5 cm) 6-cup (1.5 L) soufflé dish, lined with greased heavy-duty foil, or 7-inch (17.5 cm) well-greased springform pan
Crust
1 cup    gingersnap cookie crumbs    250 mL
3 tbsp    packed brown sugar    45 mL
12 tsp    ground ginger    2 mL
3 tbsp    melted butter    45 mL
Cheesecake
2    packages (each 8 oz/250 g) cream cheese,     2
    softened
34 cup    granulated sugar    175 mL
3    eggs    3
1 tsp    vanilla    5 mL
14 tsp    each ground cinnamon, cloves and nutmeg    1 mL
12 cup    pumpkin purée (not pie filling)    125 mL
12 cup    whipping (35%) cream    125 mL
4 oz    semisweet or bittersweet chocolate, melted    125 g
    Chocolate curls
1.    Crust: In a bowl, mix together gingersnap crumbs, brown sugar and ginger. Add butter and mix to blend. Press mixture into the bottom of prepared dish. Place in freezer until ready to use.
2.    Cheesecake: In a food processor, combine cream cheese with sugar and process until smooth. Add eggs, vanilla, cinnamon, cloves and nutmeg and process until combined. Add pumpkin and whipping cream and process until smooth. Pour mixture over crust. Pour chocolate over mixture, then, using a knife, swirl to marbleize. Cover dish tightly with foil and secure with string.
(If using a springform pan). Place dish in slow cooker stoneware and pour in enough boiling water to come
1 inch (2.5 cm) up the sides of dish. Cover and cook on High for
3 to 4 hours, until edges are set and center is slightly jiggly. Chill thoroughly before serving. Garnish with chocolate swirls.

TIP
    To melt chocolate: Grate the chocolate first by pulsing it in a food processor. Then melt in a double boiler over hot, not boiling, water, stirring constantly. This ensures that the chocolate doesn’t “seize” and become grainy.

You say Pimiento and I say Pimento because I'm from the southern state of  Georgia. No matter! What's great is these tasty heart-shaped peppers are packed full of nutritional goodness and great for making many yummy recipes. There is Vitamins A, Vitamins C, Vitamins K and Vitamin B-9/Folate.

I checked out many recipes before making my very first Pimento Cheese Spread that used fresh Pimentos from my own garden. My family and I enjoy the smooth creamy textured pepper spread. And, I found there are many other recipes create using fresh Pimento Peppers. Have you tried adding Pimento Peppers to biscuits or cornbread? I have not but I am tempted. We know that these tasty peppers are great in salads too.

I just found a simple recipe in the Chrazy for Breakfast Sandwiches by Jessica Harlan which is published through Ulysses Press. It takes just four ingredients: sharp cheddar cheese, diced pimientos, mayonnaise and a dash of hot sauce.

Recently, I gathered the ingredients to prepare Classic Chicken Stew recipe that is featured for your enjoyment. My children and I enjoyed this recipe and want to share it courtesy of Judith Finlayson and publisher Robert Rose.  I hope to share many of the 175 Essential Slow Cooker Classics with my family in the near future.

Classic Chicken Stew
I have a real soft spot for this creamy stew, which reminds me of chicken pot pie without the crust. I obtain a similar effect by serving it over crostini placed in the bottom of a soup plate. Add a tossed green salad for a complete and delicious meal.
Make ahead
This dish can be partially prepared before it is cooked. Complete Steps 1 and 2. Cover and refrigerate overnight. The next morning, continue with the recipe.

SERVES 6
Works best in a large (minimum 5 quart) slow cooker
1    potato, peeled and diced (see Tips, below)    1
1 tbsp    vegetable oil    15 mL
2    onions, finely chopped    2
4    stalks celery, diced    4
2    carrots, peeled and diced    2
12 tsp    dried thyme leaves or 3 whole sprigs     2 mL
    of fresh thyme
1    bay leaf    1
14 cup    all-purpose flour    50 mL
112 cups    chicken stock    375 mL
12 cup    dry white wine or chicken stock    125 mL
    Salt and freshly ground black pepper
3 lbs    skinless, bone-in chicken thighs     1.5 kg
    (about 12 thighs)
1 cup    green peas, thawed if frozen    250 mL
12 cup    cream, optional (see Tips, below)    125 mL
1.    In a saucepan, combine potato and cold water to cover. Bring
to a boil and cook for 2 minutes. Remove from heat. Cover and set aside.
2.    In a skillet, heat oil over medium heat for 30 seconds. Add onions, celery and carrots and cook, stirring, until carrots are softened, about 7 minutes. Add thyme, bay leaf and flour and cook, stirring, for 1 minute. Add stock and white wine and cook, stirring, until mixture comes to a boil and thickens, about 4 minutes. Drain reserved potato and add to mixture. Season to taste with salt
and pepper.
3.    Arrange chicken over bottom of slow cooker stoneware and cover with vegetable mixture. Cover and cook on Low for 6 hours or on High for 3 hours, until juices run clear when chicken is pierced with a fork. Add peas and cream, if using, and stir well. Cover and cook on High for 20 minutes, until peas are tender and mixture is hot and bubbly.


TIPS
    Because the chicken only cooks for 6 hours on Low the potatoes will be a bit firm unless they are blanched prior to adding to the stew.
    Any kind of cream from half-and-half (10%) to the richest whipping (35%) cream works well in this recipe.
