I have always wanted to bake a homemade lemon cheesecake. I found several suggestions from "The Cheesecake Bible" like Lemon Curd Swirl Cheesecake, Meyer Lemon Cheesecake, Lemon Meringue Cheesecake, Lemon Mist Cheesecake and more. I decided that my very first homemade cheesecake would be the Lemon Mist Cheesecake because my husband's birthday is coming up and he loves lemon desserts. 

I made my shopping list for the ingredients. I almost gave up on using lemon cookies because most of the stores I visited did not carry them until I stumbled upon them at the local Dollar Tree. I bought two packages just to be on the safe side because I was not sure how many would equal 1 1/2 cups of lemon cookie crumbs. There are suggestions located in the "Common Ingredients" section of the cookbook for graham, vanilla wafers, chocolate sandwich cookies and Ritz-style crackers. The great thing about this recipe and many others is that you can alternate the cookie crusts if you cannot find a particular cookie at your favorite market. I could have chosen graham crackers and added lemon zest to it. This was a fun recipe to create from beginning to end.

My first recipe from "The Cheesecake Bible" was a unanimous success. My family and I enjoyed the Lemon Mist Cheesecake with its creamy lemon flavor!

I have won numerous awards with this recipe, also affectionately called “Patty’s Favorite Cheesecake” after my mom, my biggest fan.
Preheat oven to 350°F (180°C)
9-inch (23 cm) cheesecake pan, ungreased, or springform pan with 3-inch (7.5 cm) sides, greased

  • 114 cups graham cracker crumbs 300 mL
  • 14 cup unsalted butter, melted 50 mL

  • 4 packages (each 8 oz/250 g) cream cheese, 4 softened
  • 114 cups granulated sugar 300 mL
  • 4 eggs
  • 3 tbsp freshly squeezed lemon juice 45 mL
  • 1 tsp vanilla extract 5 mL
  • 12 cup sour cream 125 mL
  • 14 cup granulated sugar 50 mL
  • 1 tbsp freshly squeezed lemon juice 15 mL
  • 12 tsp vanilla extract 2 mL

  • 2 cups fresh strawberries, sliced 500 mL

1. Crust: In a bowl, combine graham cracker crumbs and butter. Press into bottom of cheesecake pan and freeze.
2. Filling: In a mixer bowl fitted with paddle attachment, beat cream cheese and sugar on medium-high speed until very smooth, for 3 minutes. Add eggs, one at a time, beating after each addition. Mix in lemon juice and vanilla.
3. Pour over frozen crust, smoothing out to sides of pan. Bake in preheated oven until top is light brown and center has a slight jiggle to it, 45 to 55 minutes. Let cool on the counter for 10 minutes (do not turn the oven off). The cake will sink slightly.
4. Topping: In a small bowl, combine sour cream, sugar, lemon juice and vanilla. Pour into center of cooled cake and spread out to edges. Bake for 5 minutes more. Let cool in pan on a wire rack for 2 hours. Cover with plastic wrap and refrigerate for at least 6 hours before decorating or serving.
5. Decoration: Top with sliced strawberries when completely chilled.
Serves 10 to 12

1. Describe your cookbook to us, what should readers expect?  
The best Cheesecake book ever! If you read the first two chapters before make a recipe you will be very successful. 

2. What inspired you to become a writer and how has it changed your life?

I had been teaching (culinary) for about 15 years prior to my first book and my students were asking so I fulfilled the need.

3. What is the most exciting part of being a published author?  

Getting emails knowing your recipes are part of family traditions. 

4. What were the biggest challenges you faced in writing this cookbook?  

The cost of the ingredients! I think I made over 600 cheesecakes in the time I wrote the book

5. What are your favorite recipes from this cookbook?  

The Blue Ribbon Cheesecake and the Herb Savory Cheesecake

6. What do your plans for future projects include? 

I have 9 cookbooks in print with 3 more in the final stages of publishing.. It takes at least 1-1/2 years to get the books completes

7. What are your hobbies? 

Travel. Last year I traveled and taught on all 7 continents (Yes even Antarctica (Palmer Station). Conservancy of Historical Structures.. I do a number of fundraiser for the Frank Lloyd Wright Foundation.
