Low Carb Pizza Crust

  • 1 cup Pork Rind Flour
  • 1 cup Shredded Parmesan Cheese
  • 2 Eggs
  • 2 Tbsp Minced Garlic
  • 2 Tbsp Italian Seasoning
  • Pizza toppings (as desired)


  1. To make Pork Rind Flour grind up Pork Rinds into a powder state, remove any large pieces.
  2. Pre-heat oven to 350*. Spray or oil a tin pie pan. In a bowl mix the egg, pork rinds, Parmesan cheese,Minced Garlic and seasoning well.
  3. Pour mixture into pan and spread to the sides from the middle by pressing outwards with your hands. If the mixture sticks to your hands wet them with water and it will spread smoothly. Bake for about 10 minutes or until golden brown.
  4. Remove and add desired toppings and put the pizza back under the broiler until toppings are hot and cheese is melted.

The Wonder Years - 1988 ...


The Wonder Years debuted in 1988 following ABC's broadcast of Super Bowl XXII, and the affectionate look at growing up in the late '60s and early '70s in suburban America was unlike anything else on television.  It was 1968 -- the year of Nixon and space walks and Mod Squad and Vietnam.  Enter Kevin Arnold, a sixth grader at Kennedy Junior High School.  Set against the suburban backdrop of Anytown, USA, Kevin sought to minimize his teenage angst while dealing with an older, noogie-happy brother Wayne (Jason Hervey), a rebellious sister, Karen (Olivia d'Abo), distant, workaholic father, Jack (Dan Lauria) and doting housewife mother, Norma (Alley Mills).  Add to the mix Paul Pfeiffer (Josh Saviano), his nerdy, allergy-riddled best friend, a potential love interest in winsome girl-next-door Winnie Cooper (Danica McKellar) and narration by an older, wiser, wittier Kevin (voiced by Daniel Stern) to add perspective to the nostalgia, and you have the perfect recipe for TV greatness.  And, for the next six seasons, America tuned in to follow Kevin's exploits, as he navigated adolescence in the most memorable of ways.  From 1988 to 1993, The Wonder Years was one of the most popular shows on TV, achieving a spot in the Nielsen Top 30 for four of its six seasons.  And the critical accolades and awards would follow: after only a scant six episodes, the show captured an Emmy® for "Best Comedy Series;" and, at the age of 13, Fred Savage, would become the youngest actor ever nominated as "Outstanding Lead Actor for a Comedy Series."  The series would also go on to win 24 awards (and be nominated for 70 more), including multiple Emmy® Awards, a Golden Globe® and, in 1989, a Peabody® Award for pushing the boundaries of the sitcom format and using new modes of storytelling.  Additionally, in 1997, "My Father's Office" was ranked #29 on TV Guide's "100 Greatest Episodes of All Time" and in the 2009 list, the pilot episode was ranked #43.  Suffice it to say, The Wonder Years was one of the most critically lauded sitcoms of the late 80s and early 90s.

Are you a fan of The Wonder Years television series that was featured in the late 80's and early 90's? If yes, you don't want to miss adding The Wonder Years:Season Two DVD to your home library collection. It is to be released this February 2015. Included with this set are four DVDs containing 17 episodes that runs 5 hours and 20 minutes. You can watch your favorite memorable characters like Kevin Arnold(Fred Savage), brother Wayne Arnold(Jason Hervey) and the lovely Winnie Cooper(Danica McKellar) just to name a few. 

I was thrilled to share The Wonder Years: Season Two with my younger children. The second series arrived just before the celebrated birthday of Martin Luther King Jr. We were able to include a discussion about Rev. Martin Luther King Jr as part of our homeschool social studies lesson with the showing of Season 2, Episode 2 called Our Miss White. This show featured Miss White's play production about the civil rights for her 7th grader class. Kevin reluctantly participates but agrees because he has a crush on her. It was a wonderful show which opens up great discussion time for families with so many topics about history, love and more. This set is filled with amply bonus features with over two hours of enjoyment. 

Be sure to get caught up with the series by purchasing copies of both The Wonder Years: Season One and The Wonder Years: Season Two. It is a great collection for family home libraries or the movie collector.

Recipe: The Original Banana Pudding

The Original Banana Pudding(Nilla Wafers)
Banana Pudding - Ingredients: 1/2 c. Sugar, Flour, 2 c. Milk, 3 Eggs, Dash Salt, Vanilla, Bananas,

KitchenAid Mixer - Banana Pudding - 1/4 c. sugar & 3 egg yolk for topping

Layers of NILLA wafers, creamy pudding and fresh banana slices are the stars of this American classic.

Prep: 30 mins - Cook: 15 mins - Cool: 15 mins

3/4 cup sugar, divided
1/3 cup all-purpose flour
Dash salt
3 eggs, separated
2 cups milk
1/2 teaspoon vanilla extract
45 NILLA Wafers, divided
5 ripe bananas, sliced (about 3 1/2 cups), divided
Additional NILLA Wafers and banana slices, for garnish

1. Mix 1/2 cup sugar, flour and salt in top of double boiler. Blend in 3 egg yolks and milk. Cook, uncovered, over boiling water, stirring constantly for 10 to 12 minutes or until thickened. Remove from heat; stir in vanilla.

2. Reserve 10 wafers for garnish. Spread small amount of custard on bottom of 1 1/2-quart casserole; cover with a layer of wafers and a layer of sliced bananas. Pour about 1/3 of custard over bananas. Continue to layer wafers, bananas and custard to make a total of 3 layers of each, ending with custard.

3. Beat egg whites until soft peaks form; gradually add remaining 1/4 cup sugar and beat until stiff but not dry. Spoon on top of pudding, spreading evenly to cover entire surface and sealing well to edges.

4. Bake at 350°F in top half of oven for 15 to 20 minutes or until browned. Cool slightly or refrigerate. Garnish with additional wafers and banana slices just before serving.

Chocolate Fondue, page 171, sweet endings
Chocolate fondue is a very elegant dessert. It is so easy to make that you shouldn’t let others know exactly how easy. It is a very special dessert for a child’s birthday when made without the liqueur; you can substitute decaf coffee instead.

Leftover fondue can be refrigerated overnight. Warm in microwave before serving.
Try to use a fondue pot with a tea light that is made for chocolate fondue so that the chocolate won’t burn.

Ceramic fondue pot or medium ceramic dish

3⁄4 cup whipping (35%) cream 175 mL
1 cup semisweet chocolate chips 250 mL
2 tbsp liqueur such as hazelnut 25 mL
or Galliano

Suggested Dipping Items
Cubes of loaf or pound cake
Banana chunks
Orange segments
Large marshmallows
Small cookies
Dried fruit

1. In a microwave-safe bowl, combine cream and chocolate chips. Microwave on High for 1 to 2 minutes, stirring every 30 seconds, until chocolate is shiny and almost melted. Stir until smooth.

2. Whisk liqueur into chocolate mixture. Transfer to fondue pot.

3. Arrange dipping items on a platter and serve.
