There are lots of mishaps along the way and when he gets there he cannot find Emily! Oh, no! What will he do?

I loved hearing my eight year old daughter Summer read "Eric's Big Day: A Bicycle Race Unlike Any Other" by Rod Waters. She had fun reading it and she made wonderful comments about the authors illustrations. It is a great book for reading aloud or having your child read to you. Enjoy!

Originally, our Sunday drive took us to Beaufort, NC to see Columbus' Ships the Pinta and Nina. We saw the Pinta only. The Nina was still in South Carolina with engine troubles. We picnicked and walked Fort Macon beach. They were dredging.(huge pipes on the beach) Stinky! The water was too cold to swim for us. lol We visited Fort Macon. And, earlier  that morning we rode to Union Point Park Complex in New Bern, NC and stopped by Brocks Mill House and Pond in Trenton, NC on our way home.

We went this past Sunday to see replica's of Columbus' Ships at 315 Front St, Beaufort, NC 28516. Unfortunately, the Nina was not available due to mechanical issues. They informed us it would be arriving days later. We were permitted to board the Pinta. You can view the ships up until May 23, 2014.  For more information call 252-728-731.

My Thoughts
My daughters and I enjoy baking and creating fun meals for the family. As a young girl, I loved coming home after-school and on occasion baking up a pan of Tea Cake Cookies. The recipe was simple and easy to whip up. I would love to share this tradition with my five daughters.

Of this number, 2.5 million Americans are living with celiac disease but are undiagnosed, putting them in danger of additional long-term health conditions should the disease not be properly diagnosed.

The impact of these numbers and the importance of supporting the awareness of celiac disease and gluten sensitivities do not escape Craig Nielsen, CEO of Nielsen-Massey Vanillas, Inc. “These days, almost everyone knows or cooks for someone with celiac disease or gluten-sensitivities. Breakfast is perhaps the most challenging meal of the day for those with celiac disease, as it is dominated by wheat-based foods such as pancakes, doughnuts, bagels and cereals. The following recipes for Breakfast Quinoa with Vanilla Cream and Gluten-Free Hotcakes with Maple Orange Syrup use healthy ingredients such as quinoa, apples, almond meal and Nielsen-Massey Organic Fairtrade Madagascar Bourbon Pure Vanilla Extract for breakfast options that are delicious yet hearty and gluten-free. Eat the Breakfast Quinoa on its own for a healthy weekday breakfast that is also dairy-free, or pair it with the Vanilla Cream for a slightly indulgent twist. Prepare the Gluten-Free Hotcakes as well for a weekend brunch that will satisfy everyone.






Breakfast Quinoa with Vanilla Cream
Serves 4

Quinoa
Ingredients
1 cup traditional quinoa, rinsed and drained
1½ cups water
½ cup unsweetened coconut milk
2 teaspoons Nielsen-Massey Organic Fairtrade Madagascar Bourbon Pure Vanilla Extract
½ cup golden raisins
¼ cup firmly packed light brown sugar
¼ teaspoon ground cardamom
½ teaspoon ground cinnamon
⅛ teaspoon salt
1 small Fuji apple peeled, cored and cut into bite-size pieces

Directions
In a large saucepan over medium-high heat, add quinoa and water. Bring to a boil while stirring occasionally. Reduce heat to a simmer then add coconut milk, vanilla extract, raisins, brown sugar, cardamom, cinnamon and salt. Cover and cook until done, about 20-25 minutes; stirring occasionally. Add apple pieces about 3 minutes before removing quinoa from heat.

Vanilla Cream (Yield ½ cup)
Ingredients
½ cup half-and-half
½ teaspoon Nielsen-Massey Organic Fairtrade Madagascar Bourbon Pure Vanilla Extract
1 tablespoon powdered sugar

Directions
In a small bowl, whisk ingredients until combined. Serve each bowl of Breakfast Quinoa topped with 2 tablespoons of Vanilla Cream.




Gluten-Free Hotcakes with Maple Orange Syrup
Makes about 1 dozen

Maple Orange Syrup
1 cup pure maple syrup
1 teaspoon Nielsen-Massey Tahitian Pure Vanilla Extract
⅛ teaspoon Nielsen-Massey Pure Orange Extract

Pancakes
1 cup brown rice flour
½ cup finely ground tapioca flour
½ cup finely ground almond meal flour
¼ cup sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon salt
1 teaspoon Nielsen-Massey Organic Fairtrade Madagascar Bourbon Pure Vanilla Extract
2 tablespoons butter, melted
2 eggs, lightly beaten
1 cup low-fat buttermilk

For Maple Orange Syrup
In a glass measuring cup, combine maple syrup, vanilla and orange extracts. Pour into a syrup dispenser; set aside.

For Pancakes
In a large bowl, add flours, sugar, baking powder, baking soda, cinnamon and salt; stir to combine. Add vanilla extract, butter, eggs and buttermilk; stir to combine.

Lightly coat a griddle with cooking spray and heat to 350⁰F. Pour batter, about ¼ cup per pancake, onto griddle and cook until done, about 2-3 minutes per each side.

We were excited when we received the "Dad's Book of Awesome Science Experiments" by Mike Adamick. What a wonderful way to get your kids in the Mad Scientist mood! You and your family can have tons of fun learning simple science projects by using inexpensive items that can be found around the home or from your local department stores.

My daughter and I scurried through the house to collect items for the project called Balancing Act. We compiled our list of supplies: a pencil, a ruler, duck tape and ten pennies. As you can see from our photo, we followed the easy-to-understand section entitled,  "Here's What You Do" in order to achieve these scientific results. We had to tweak our ruler in order to get the pennies to balance by adding a piece of duck tape over the area with a hole in the ruler. We had several rulers that were broken or chipped. If that is your situation, I suggest a new ruler since they are inexpensive to reproduce.

We picked Penny Shiners! from Chapter 2 because we were already using pennies the previous day. Our project list consisted of vinegar, salt, a glass, paper towels and dirty pennies! My daughter enjoyed participating in this experiment and learning historic tidbits about the Statue of Liberty. She thought it was cool to see the pennies magically become like new again and then turn splotchy green when air dried.


Explore everything from chemistry, biology, physics, planet earth and the human body. A sampling from the thirty science projects that you may enjoy are as follows: Rock Candy Crystals, Banana Balloon, Mentos and Coke Rocket, Fingerprints Monsters and many more. Some of the projects require parental supervision, please keep this in mind.

Paracord was originally used during World War II for parachute suspension lines because it is incredibly strong and durable. It is found in a vast array of colors and has become popular with crafters and survivalists.

What is Paracord? It comes from the rope family and is made of nylon kermantle core. It comes in various strengths like 550. 550 means the breaking strength of 550 pounds. Survivalists may use it for things like making a clothesline, fire, fishing line, boot laces, belts, splints and a tourniquet. The things you can make and do with paracord are innumerable.

Alabama native and author, Chad Poole introduces his newest book "Crafting with Paracord". This book features 50 creative craft projects that offers step-by-step instructions and full-color photographs with basic lessons and introduction in knot tying. You will find stylish and functional projects to make such as watchbands, key chains, bracelets, knife handle wraps, and more.

My family and I received a complimentary copy of "Bella Sara: Emma's Wings" on DVD for this review posting. We were not familiar with Bella Sara trading cards or products until now. Immediately, I visited the website to learn more about Bella Sara.  I understand why girls everywhere love it! They can adopt their very own magical horse, play virtual games and much more. It created for entertainment but for empowering and helping maintain self-esteem with our daughters and granddaughters. Bella Sara is a social-networking site that requires parental approval for ages 13 and under. (Ages 5 and up recommended) Safety First!  It's FREE to join!
