Boberry Biscuits

All week long, I had planned to bake a batch of blueberry biscuits similar to the ones I like from Bojangles. Today, I decided it was time to heat the oven and get my "bake-on!" I found several recipes from surfing online and I tweaked them to make the Boberry Biscuits featured in the photo above. I plan on making my own biscuit mix the next time. If you are strapped for time then using Bisquick is a good alternative.

Boberry Biscuits

Biscuit Recipe:
  • 2 cups Bisquick mix(Add more or use Self-rising flour if dough is sticky)
  • 3/4 cup milk
  • 3 Tbsp. Sugar 
  • Blueberries(fresh or frozen; crushed)

Glaze Ingredients:
  • 1 cup Powdered Sugar
  • 1/8 cup Milk 
  • 1 tsp. Vanilla Extract
  • 1/2 tsp. lemon juice (optional)

 Tip Off: Bojangles does not make their biscuits with real blueberries, those are actual blueberry pellets. 

After mixing the biscuit batter, gently fold in the clean, crushed blueberries. Pour the batter onto a lightly floured cutting board or table surface. Use a rolling pin to make 1/2" thick biscuits with a 2 1/2" biscuit cutter. Bake the biscuits according to Bisquick package.

Add melted butter once the plump blueberry biscuits have cooled. Then, mix the glaze ingredients together until smooth. Drizzle yummy glazed icing over each biscuit. Eat! Enjoy!

Options: If you do not have a biscuit cutter, try a cup or glass. A recycled clean can with both ends removed will do just great!

Pre-heat oven 450 F.
Servings: 9 to 12
