Recipe: Black Skillet Fried Chicken

Black Skillet Fried Chicken(Similar to Paula Deen's Southern Fried Chicken)

Ingredients:

  • 4 lb. Cut-up Chicken(legs, thighs, etc)
Sauce:
  • 1 cup Texas Pete Hot Sauce(brand opt)
  • 1 Large Egg
  • 1/3 cup Water
Seasoning:(Paul Deen's House Seasoning)
  • 1 1/2 tsp. Salt
  • 1 1/2 tsp. Pepper
  • 1/4 tsp. Garlic Powder
Dredging Mixture:

  • 2 cups Self-Rising Flour
  • OR Opt. 2 cups All Purpose Flour, 1 Tbsp. Baking Powder, and 1/4 tsp salt

Directions:

  1. Heat cast iron skillet filled with vegetable oil half way (prevent boil over/fire) or 350f electric skillet.
  2. Sauce: Beat the egg and water in a medium sized mixing bowl. 
  3. Whisk the hot sauce into the egg & water mixture. 
  4. Seasoning: Add salt, powder & garlic powder. (House Seasoning)
  5. Dredging Mix: Add flour ingredients together.(flour, salt, baking soda)
  6. Rinse Raw Chicken and pat dry. Wash hands.(Safety: keep counters and dishes clean)
  7. Sprinkle or Pat the Seasoning Mix on the raw chicken pieces.
  8. Drop the raw chicken, one piece at a time into the Hot Sauce Mixture.
  9. Roll the sauced chicken pieces individually in the Flour Mixture. Coat well.
  10. Carefully drop the coated chicken into the hot oil. (slowly to prevent burns & splatter)
  11. Add only a few pieces of chicken at a time to prevent crowding.
  12. Fry until brown and crisp. Use a cooking thermometer. Poultry is 180 F.
  13. Dark meat about 14 minutes and white is 10 minutes. (turn half way) Thermometer 180F. 
  14. Drain cooked chicken on paper towels.
  15. It's done if the juice runs clear and/or 180 F.

Notes: I bought 10 large cut-up chicken thighs and the ingredients were amply for this recipe. The original recipe called for 4 eggs. I opted to use only one large egg. You can use an electric skillet or frying pan. (black skillet) If using a non-electric skillet the chicken may darken more quickly. You may need to adjust the heat if it smokes. Using a lid on your non-electric skillet/pan will help the chicken from cooking too quickly. I prefer using a cooking thermometer for cooking meat accurately. I would suggest if you want the chicken more spicy to allow over night marinating with hot sauce. This recipe was not overly spicy. Child friendly. For safety issues, do not leave the kitchen when frying chicken. Keep counters and dishes clean to prevent illness. And, electric skillets can be a hazard if knocked over. Cook safe. Have fun!  Enjoy!

Recipe: Crock-pot Chicken Chili

Crock-pot Chicken Chili

Makes 6 to8 servings

Ingredients:
  • 1 Tbsp Olive Oil
  • 1 lbs chicken breast(skinless & boneless, cubed)
  • 1 onion, chopped
  • 1 green bell pepper, seeded & chopped
  • 1 chive, chopped
  • 1 can light or dark red kidney beans, drained & rinsed
  • 1 can black beans, drained & rinsed
  • 1 can whole kernel corn, drained
  • 2 cups tomato sauce
  • 4 cups or 28 oz can of tomatoes, diced
  • 1/4 cup chili powder
  • 1 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp ground red pepper
  • 1/2 tsp mustard chili onion mix(opt)
  • 2 cloves of garlic finely chopped
  • salt & pepper to taste
  • 1/2 cup(2 oz) shredded Cheddar cheese
Instructions: (Wash all vegetables)

Heat the olive oil in a non-stick skillet and cook the chicken until no longer pink on medium high heat. Add to the cooked chicken - bell peppers and onion. Onion should be cooked until transparency is exposed.

Add all the other ingredients, except the Cheddar cheese to a crock-pot. Stir the mixture and put on low heat for 6 to 8 hours.

Serve hot Crock-pot Chicken Chili by topping with some Cheddar cheese and a few saltine crackers on the side, if you would like. 

Hint: I used garden fresh tomatoes. I simply washed them and chopped them up. I doubled this recipe since it's a favorite at our home.

Recipe: Mexican Stuffed Bell Peppers



Mexican Stuffed Bell Peppers
Mexican Stuffed Bell Peppers(Originally Mexican Stuffed Peppers for Two)

When I visited my sister in Georgia she gave us several bell peppers from their garden at Harper Farms. They shared several yummy vegetables with us.

And, this Mexican Stuffed Bell Pepper recipe is from Kraft. I modified it to fit our families needs.  Enjoy!


Ingredients:

  • 1 lb. ground chuck beef, cooked & drained fat
  • 1 onion, chopped
  • 3 Tbsp Taco Seasoning or 1/4 cup of Taco Seasoning
  • 1 1/4 cup of Water
  • 1 tomato chopped
  • 1/2 cup instant brown rice(opt. white rice)
  • 2 large green bell peppers(opt. any color)
  • 1/4 cup Taco Salsa
  • 3/4 cup of Sharp Cheddar Cheese(divided)
Instructions:

PREHEAT the oven to 400.F.

BROWN the ground beef and chopped onion until meat is no longer pink and onion is transparent.
Stir in taco seasoning and 1/2 cup of water. Bring the mixture to a boil for five minutes. Reduce the and simmer, stirring occasionally. Divide the meat mixture in half. Save for later or freeze it for another recipe like Soft Tacos, Nachos, or Tostadas.

STIR  half a cup of the remaining water into the ground beef onion mixture. Add the tomatoes. Bring to a boil. Stir in the brown rice. Cover. Shut off the heat and allow to sit for five minutes. Prepare the washed bell peppers by cutting off the tops to make a bowl for the ground beef mixture. Discard the seeds and the top. Mix the remaining water and salsa to a 9 -inch baking dish. Layer the dish with the bell peppers.

ADD half a cup of Cheddar cheese to the meat mixture. Stir. Spoon into the bell peppers and to with remaining cheese.

BAKE 35 to 40 minutes. Serve with the salsa sauce from the baking dish.

Recipe: Taco Rice Bake

Ingredients:
  • 1 lbs lean hamburger meat
  • 1 onion, chopped
  • 1/2 pack taco seasoning or 1/4 cup
  • 1 16oz. can chunk tomatoes, drained(reserve juice)
  • 1 cup rice
  • Water
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded Cheddar cheese
  • 2 cups Bisquick mix
  • Milk 

Instructions:

Fry the hamburger meat along with onion until browned.(no longer pink) Drain. Add taco seasoning
and tomatoes. Cook the rice with reserved tomato juice and add enough water to make 2 1/2 cups of liquid. When the rice is finished cooking or softened(if not using a rice pot) mix it with the hamburger and onion. Pour it into a 13 x 9 inch baking dish or pan. Mix the mayonnaise, sour cream, and shredded cheddar cheese and put on top of the hamburger mixture. Do not stir. Make a thin batter using Bisquick and milk. Pour it on top of the cheese mixture. Bake at 400 f. for approximately 30 minutes.(until lightly browned)

My Tips: I referred to the Bisquick box for mixture ideas for the batter. If unsure, just pour the milk slowly and stir until you get the batter you want. (not too much milk it will be loose, too little is dry) Also, I added garden fresh tomatoes and a can of chunk tomatoes for the juice. You can lightly squeeze the fresh tomatoes to get your own juice before slicing them. I also added garden fresh basil. It was very good. Enjoy!

My Thoughts
 

Recently, I received Chihuahua Too! in the mail for review from eOne Entertainment. I wished my youngest daughter were her to watch it so I could include her input. Anyways, we plan to watch it together when she returns from her vacation this weekend. I wished I had seen the prequel to Chihuahua Too! because this is a wonderful family movie! There is never a dull moment. It's funny and not too scary for young children. If you loves dogs or just want to watch a great family friendly movie then Chihuahua Too! is a super pick! Enjoy!

Recipe: Southern Peach Cobbler

Ingredients:

  • 1 Quarts or 5 Medium Peaches - wash, peeled & sliced
  • 3/4 cup of Self-Rising Flour
  • 3/4 cup of Whole Milk
  • 1/2 cup plus 1/4 cup Sugar
  • 3/4 stick or 6 Tbsp of Butter or margarine
  • 1 tsp. Vanilla 
  • 1 tsp. Cinnamon

Instructions:

1. Melt 6 Tbsp. of butter or margarine and pour it into the baking dish.
2. Wash, peel and slice the peaches - discard the seeds.
3. Toss the peaches gently with cinnamon, vanilla and 1/4 cup of sugar. Set aside.
4. Mix flour, sugar and milk - pour on top of the melted butter.
5. Do not stir but place the sliced peaches over the mixture.
6. Bake at 325 f. for about 35 minutes or until brown and bubbly.
7. Serve hot or cold with vanilla ice cream or whipped cream.
8. I usually add a sprinkle of cinnamon for decoration on top during baking.

Recipe: Homemade Tomato Sauce(Salsa di Pomodoro)

Welcome, Carl and I grew several tomato plants in my backyard and basil and wanted to use those vegetables in a recipe. I was getting tired of eating just tomato sandwiches. I hope you will try this Tomato Sauce recipe and share with us what delicious meals you want to prepare using it. I am hoping to use it for a new chili recipe or spaghetti sauce recipe for my crock-pot.  Enjoy!

Homemade Tomato Sauce
(Salsa di Pomodoro)

  • 4 lbs. ripe tomatoes
  • 1/4 cup olive oil
  • 2 cloves garlic, crushed
  • 1 carrot, finely chopped
  • 1 tsp sugar
  • 1 Tbsp chopped fresh basil
  • 1 Tbsp chopped parsley
  • salt & pepper

1. Chop tomatoes and cook in a large saucepan for about 10 minutes or until tomatoes are softened.
2. Puree in an electric blender.
3. Saute the garlic in the olive oil for about five minutes.
4. Add diced carrots, sugar, parsley, basil, and tomato puree. Season to taste with salt & pepper.
5. Cook, uncovered over low heat for about an 1 1/2 hours. Stir occasionally.
