|ITALIAN SAUSAGE SKILLET DINNER|
1 lg. onion, chopped
2 cloves garlic, minced
Small amount oil
3/4 lb. Italian sausage
3 med. potatoes, peeled and cut into 1 inch cubes
1 small can tomato paste (2 cans water)
1 bay leaf
1/4 tsp. oregano
Salt and pepper to taste
Saute onion and garlic in small amount of olive oil until golden. Stir in Italian sausage
(cut into bite size lengths) and potatoes. Add tomato paste, bay leaf, oregano,
salt and pepper. Simmer, covered, for 45 to 50 minutes or until sausage is tender and
potatoes are done.
