What's for Supper?

Wonder what to eat for dinner tonight? Well, my family loves to eat breakfast for supper. We usually have fried eggs, grits with butter and cheddar cheese, bacon, sausage and buttered biscuits with jelly.

I thought it would be nice to share my biscuit recipe with Ya'll. I have been making biscuits ever since I was nine years old. I learned from my Granny and Mom. So the ingredient amounts are estimates since I usally just have at it. Enjoy!

Ingredients:
  • 4 1/2 cup Self-Rising Flour(You will not need all of the SRF)
  • 1/2 cup of Vegetable Shortening
  • 1 1/4 cup of Buttermilk(or Whole Milk plus 1 TBSP of Vinegar)
  • Self-Rising Flour(for dusting)
  • 2 TBSP Melted Butter(for topping)
Instructions:

I use a large Tupperware bowl filled with sifted Self-Rising Flour. I have used this same bowl for over twenty-eight years.

Begin by making a well in the center of the bowl. Add shortening and milk mixture to the well. Start incorporating a little flour by using your hand like a spoon. Knead the Self-Rising Flour until the mixture is no longer sticky. You can add extra flour if needed by sifting it onto your dough ball. 

When the mixture is no longer sticky, start by pinching a small amount into one hand. Dusting: Apply some flour to both hands and begin rolling the ball into your hands to make the biscuit. Layer your biscuits into a well greased pan or a pan layered with a Silicon Baking Sheet.

Insert the biscuits into the preheated oven at 425.F and bake for apporimately 15 minutes or until lightly browned. You can brush the tops with melted butter once the baking procedure is complete.

Optional: I make my own buttermilk. I use 1 cup of water, 1/3 cup of powdered milk, and 1 tablespoon of white vinegar.

Suggestions: Butter your biscuit and add honey, jelly or jam. Also, you can add meats like sausage, ham or bacon to the biscuits.

Bake: 425.F for approx. 15-18 minutes or until lightly browned

Bakers & Chefs Small Batch Biscuits

Blend dry ingredients. Add shortening. Cut in until shortening is in small pieces. Add milk and stir just until incorporated. Knead lightly. roll and cut into desired thickness and size. Bake at 425 F for 10-12 minutes.
